
What is cheese honey?


Cheese honey is, as the name suggests, a honey that is specifically created to accompany cheese. It creates that delicious blend of savory and sweet which is such a gourmet phenomenon right now.
It’s perfect with blue cheeses, with Manchego, Gouda or an aged artisan cheddar. But the ultimate treat is to create a fabulous grilled cheese sandwich and to use the honey as a dip. Mmmmmmmmmmmmmmmm.
We have a particular fondness for our supplier, the Savannah Bee Company. Just as we are here in Fort Lauderdale, the company is concerned about the environment and in particular, the sea turtle. At the moment, the sea turtles are laying their eggs on Fort Lauderdale beach. The Savannah Bee Company supports the Georgia Sea Turtle Center.
Try their honey in this fabulous crostini recipe. First, pre-heat your oven to 400 degrees. Then assemble:
About a pound of red grapes
A tablespoon of olive oil
A baguette, thinly sliced
The blue cheese of your choice – about five ounces
And of course …. cheese honey
Place the grapes on a large baking sheet and drizzle them with the olive oil. Roast them in the oven for about twenty minutes. Allow them to cool.
Whilst they are cooling, toast the baguette slices in the 400 degree oven until they are golden.
Arrange a few grapes on the top of each slice. Top with blue cheese and a drizzle of honey.
Wow. Personally. I think I would flash the crostini for just a few seconds under the broiler to make the cheese slightly gooey but that’s just me
